Homemade pizzas !

I've been having a major pizza craving & since I just got my paws on some yeast & flour - decided to make some pizzas from scratch ! It's been awhile since I've done this so I googled EASY pizza dough haha .. and that it was. Here's the dough recipe:

Before I started on the dough - I got the sauce seasoned up & chopped the veg. I just put about 3 cups of the tomato sauce into a pot & seasoned with dried basil, oregano, garlic powder & habanero salt (i like spicy : ) )  Sorry no measurements on those - I just season to taste, so just slowly add things until it tastes prrfect. I'd recommend against buying a pre made pizza sauce, there's always lots of unecessary sodium & sugar in those. If you only have fresh tomatoes though, you can cook them down in olive oil & blend that, then season. I had this HUGE 'can' that was graciously donated to me the other day.. this is the time I'm thankful for my jar hoarding.
                                   
After getting the sauce together and my toppings all chopped - I got started on the dough. Dissolved the yeast & sugar in warm water (careful not too hot !) for 10 minutes. Also start preheating the oven now !
Then I melted about a tablespoon of butter into a pan & got some yellow onion slightly carmelized + threw in a couple chopped portobello mushrooms + crumbled tempeh - for kind of like an italian 'sausage & peppers' pizza minus the meat.. & um... peppers bc I sadly don't have any. Green peppers woulda been awesome ! I seasoned it same as the sauce. Dried italian herbs, garlic powder, & salt. I'm sensitive to fresh garlic, but garlic minced cooked with the onion would be best ! Another topping I added later was kalamata olives

Yeast is ready !
Then add all the dry ingredients from the recipe above (flour, salt, olive oil) & combine until smooth / roll into a ball - let rest for 5 minutes. Usually you'd have to rest for way longer, but this is the fast eZ recipe, so just 5 min : )
After 5 min I covered my counter with floured wax paper & rolled the dough out like so with a rolling pin. I like mine thin. I always throw it in the preheated oven about 3 minutes first to give it a lil precook. No one wanna eat no raw dough :P

Top with sauce, toppings, & cheese. I have a TON of parmesan & provolone, so that's what I used.

Into the oven they went & cooked for about 13 minutes. After 10m keep checking though - take it out when the crust is golden
VOILA ! PiZZA ! 
I was contemplating ordering some fancy pizza and spending way too much money, so I'm proud I just jumped in and made it from scratch ! V. fun & rewarding (my stomach is siiiiinging).
