Cauliflower pizza crust

I've been eating WAY more bread than I normally do. Tons of white flour too which is not the best for you. So for pizza today I tried out this cauliflower crust recipe & it came out sooo GOOD ! This recipe made 2 small pizzas, which was perfect for lunch. It was a bit time consuming - next time I'll probably double or triple the recipe & just freeze some crusts. All you need for 2 pizzas though is:

1 head cauliflower
1 large egg
1 tsp dried basil
1 tsp dried oregano
1 tsp salt
1/2 tsp ground pepper
1/2 cup parmesan or mozzarella (grated/shredded)

Preheat oven to 375 degrees. Cut cauliflower into florets - then add to food processor & pulse until it resembles 'rice'. Spread onto baking tray & bake for 15 minutes


Once it's done baking - let cool & then scoop onto a cheesecloth lined bowl or into a nut milk bag (which is what I had) Now squeeze the shit out of it ! You should get about 3 cups of water out of it. The more water you can get out the better the crust will come out. Takes a minute but you do not want to skip this step ! Turn oven temp up to 450 degrees.

 Then in a dry medium sized bowl, whisk the egg & spices together well - then add cauliflower & cheese - I used mozzarella but parmesan would work fine too.

Once everything is completely combined - press into circular crusts on a lightly greased parchment paper lined baking sheet. Then bake for 20 minutes (make sure the oven is at 450 degrees) - after 20 minutes is up flip them & let make for a couple minutes more.

While that's baking, get your toppings together. I cooked up some mushrooms & cut up kalamata olives & pepperoni. I also made some fresh pizza sauce with cooked cherry tomatoes & onion - spiced up with italian seasoning, salt & cayenne - then blended it with the immersion blender.

 Crusts done ! So cool.

Topped ! Excited about the fresh mozz I got from central market. Love their cheese.

Peruvian green sauce

So this isn't 100% authentic because aji peppers & paste aren't the easiest to come by now, BUT it tastes almost identical ! I'm obsessed with peruvian food which is also not easy to come by, especially in Texas. This sauce is great on ANYTHING, i could literally chug it lol. Here's the recipe:

3 jalapenos (seeded if you're a wuss !!!)
bunch of cilantro
Juice from 1 lime
3 tblspn mayo
1/4 cup olive oil
1/4 cup water

Just blend everything ! If it's too thin for you add more mayo. I personally like this consistency.
Also can be made vegan of course with veg mayo.

Banana Almond Pulp Cookies

Made some almond milk the other day, as I usually do every 4 or 5 days & made some cookies with the pulp today. I always squeeze out as much from the pulp as I can before baking with it. This pulp sat in the fridge for a couple days, kinda helps to dry it out a little. For these cookies you'll need:

2 over ripe bananas
1 packed cup almond pulp
1/2 cup nut butter (i used peanut)
1/3 cup honey
1/4 cup rolled oats
1 tsp baking powder
1/2 tsp salt
2 tbsp flour

Preheat oven to 350 degrees. Then smoosh the bananas in yr mixing bowl & add the nut butter, honey, baking powder, oats & salt to that

Then add flour til it thickens & shake in your almond pulp while mixing

Then use a large spoon to portion out the cooking on a parchment lined baking sheet

Cook for 20-25min & BAM ! CoOOoookieS !

 Let cool & enjoy : ) They're super soft & great w/ coffee !

Cheesy crackers !

Haha I guess a couple days meant.. today : )
I found this recipe and just had to share.. because... cheesy crackers !!

You'll need:
1 cup all purpose flour
1.5 cups shredded cheddar cheese
1.5 tsp cornstarch
1/2 tsp salt
5-6 tbl unsalted butter, cut into slabs
2 tbl cold water
optional sea salt for sprinkling

Here's what I used:

First shred the cheese if it's not already shredded, then add that to a food processor with the flour, cornstarch & salt

Pulse that for 30 seconds, then slowly add butter.. pulsing a little as you go until it resembles wet sand 

then slowly add water to the food processor & pulse about 10 times until a dough forms. Then put the dough onto a lightly floured surface & press with hands (not roll) into a 6inx6in slab. Wrap that with plastic wrap & place in the fridge for 45 min.

After the 45 minutes is up preheat oven to 350 degrees & take the dough out and let it soften a little -  about 15 min. Then roll out to 8-9 inches / 1/3 inch thick - slice into 1 inch squares with a pizza cutter & poke small circles into the center of each with the round end of a skewer. Then arrange as fast as you can onto a parchment lined baking sheet (don't want the butter to get too melty). Sprinkle some sea salt on top if you'd like.

Bake for 16-20 min. Just keep en eye on then - maybe do a little taste test after 16 min to see if they're where you'd like em to be. Then enjoyyy ! The best goldfish you eva had ! And only 6 ingredients !

Fresh pasta.. yummm

Had a craving for some garlicky, buttery noodles.. so I went through a lot of recipes like I always do until I found one that wasn't too complicated & had good reviews. Click here to check it out . Came out great. I'm gonna make some ravioli next w/ it. Just a couple pix:


Holy Schnikes ! Hummus

I was able to finally get my hands on some tahini ! Woohoooo, so made some hummus. The other day I ordered some wings from Tommy Want Wingy & got them buffalo hot - but I always get the holy schnikes sauce on the side because that shit is FIRE.. literally. I like to dab my wings in it a tiny to bring them up a little. I had a bunch left cause a little goes a long way, so I put some in my hummus. So good ! Here's the recipe & things used:
  
First I shelled the beans while watching cartoons of course

Then whipped the tahini & lemon juice together first a couple times before adding the rest of the ingredients

Schnikes !! Just added that much.. it's HOT so would rather add a little at a time than too much

 Done ! W/ a lil more schnikes on top : )
