I've been kinda lazy today - so I decided to get off my butt and make a nice dinner for the hub.
We've had spring roll wrappers in our cupboard forever & I've looked at some vegan bacon recipes using those in the past so I fired up google and found this one.
Wrote out the recipe first
Got a large pot ready with water (to quickly dip the wrappers) & whipped up the marinade
Oh btw these are the wrappers I used
Used these pretty peppercorns from Barcelona - Added about a tsp & a half to the marinade (ground of course with pestle).

I didn't get pics of the next part because it got kind of messy lol.. Dip the wrappers (2 together) quickly in the water - then quickly cut into long strips. Coat both sides with the marinade, then place on parchment lined foil (or baking pan would be better if you have one) Also, note to self.. BUY BAKING PANS. They look like:
Then I obsessively watched them in the oven. The recipe says it takes 7-8 minutes, but mine seemed to take more like 15. I dunno if it's my new oven or ¯\_(ツ)_/¯ but yea, just watch em & you can tell when they're crisping up.
BOOM ! FakinBaKon ! So crunchy !! The recipe yielded this + 3 more sheets. So alot !
Oh yer, he happy.
Then made lucky guy a BGC (bacon, greens, cheez) sammich
