Spicy aF curry

After an unsuccessful attempt at finding a place to swim in the greenbelt with no ppl (we just ended up driving past everywhere) we came home & I got started on lunch. Curry ! Ordered this panang paste last week, bc I have none. I didn't make a traditional panang, just kinda freestyled the recipe which seems to be the trend these days.

First I got the rice started, because you DO NOT want the curry to be done before the rice ! Nuh uh no way. That's torture. For me anyway. Here's my tiny rice cooker I've had for like 10 years

Then I put about 2 inches of water in a pot & on medium high heat give these a quick cook. Like 8 minutes or til they get greenygreen. They drain in colander & set aside.

Then I chop, juice, measure everything else & set aside for easy cookin. My mise en place for you fancies.

In a md hot skillet I did 1/2 canola 1/2 coconut oil & threw in the onions.. cook for a min - then carrots & peppers - cook for 5 min - then the already precooked broccolini 

 throw those aromatics down in the middle then STEER it up. Add curry paste and chop it into the mix

Then coconut milk + fish sauce + lime juice + cilantro (basil too if you have) - bring to a boil , then simmer til it's at the consistency you like

 As it simmered I spent some time w/ sleepyboi 

 Done ! Serve with jasmine rice. It was spicy as fuCK (good tho) ! lol sorry Jeremy.

Maybe not the best recipe, but if you can kinda cook shouldn't be too hard.
