Thai Cucumber Salad

LOVE this ! Thai ppl usually eat this as a side to cool off their mouths from an insanely hot main dish. I make mine spicy still though. All you need is:

1 cucumber (english is my fave but just a plain one works too)
1/4 onion sliced thin
1/4 cup seasoned rice wine vinegar
 1 tsp sesame oil
1/2 tsp fish sauce (optional)
 pinch cayenne (optional)
pinch salt
 3 tbl chopped peanuts
jar

all the stuffs !
 
If I'm not using an organic cucumber - I peel the cuke. I would normally use red onion, but white is all I had an works fine - slice super thin. Then cut the cucumber into slices - then quarters
 

layer inside jar - lil bit of cuke, lil onion - etc. Then add your rice wine vinegar to a seperate bowl - I like to add about a half teaspoon of fish oil.. because well I'm thai and that's what we do. Totally optional though. Add your sesame oil, cayenne if you want it spicy + a pinch of salt - then whisk ! If I had some fresh thai chili I would use that over the cayenne. One or 2 chopped small. 
 

Then pour the liquid into the jar. Turn a couple times - then refrigerate for at least an hour.

When you're ready to eat it, crush up some peanuts. I used a shaker tin to crush em up with the end of a wooden spoon. Dish out your cucumber mix into a bowl & top with peanuts + another sprinkle of cayenne (again, optional !) A yummy summer snack. This pairs great with a gin martini : )
