Whole wheat olive oil crackers

Finally got my hands on some whole wheat flour ! It was pricy, but worth it.. really good stuff. This is the brand I ordered. I just got all of this tasty cheese too from central market & needed some crackers to eat em wit ! Found this recipe & got to work. I had to adjust it a bit because the wheat flour I got takes more moisture to come together so this is my adjustment to the recipe:

1 cup whole wheat flour
1 tsp salt
2 tsp fresh cracked pepper (or whatever herbs you wanna spice em up with.. i wanted peppA !)
3 tbl olive oil - the better the quality the better the cracker of course - I use La Tourangelle
4-5 tbl water
course sea salt to finish with

First add flour, salt, & pepper/herbs to food processor. Mix for about 10 seconds. Then stream in olive oil & water until mix starts to clump up. Press mixture into ball & knead for a minute or 2 on a lightly floured surface. Then cover & let rest for 10 minutes.

Preheat oven to 400 deg. then thinly roll out onto parchment paper. Place on baking sheet & cut into your preferred size of square. I used a pizza cutter. Sprinkle some sea salt over if ya want

Bake for 8-12 minutes or until lightly browned & crunchy. I always pull one to check before I take em out.. & VOILA !

Now enjoy with cheeeeZ or whatever you like yr crackers with : )
